Gillette,  Wyo. —  The Consumer Health Services Division of the Wyoming Department of Agriculture (WDA) conducts inspections of retail food establishments throughout Wyoming (where there is not a local health department who does inspections) to help ensure safety of Wyoming residents.

Campbell County establishments are inspected at least once a year by the WDA. All of these reports are made public and can be found on their website. It will only include the routine inspections and not the follow-up or other kinds of inspections.

According to WDA, establishments are either in or out of compliance with a non-critical (non-food related) or a critical violation (which can cause a food born illness).

Derek Grant, the Public Information Officer at WDA, explains that while they are looking for deficiencies, the organization’s “main goal is to educate the business.”

Their report is made to help the businesses understand unsafe practices and ways to correct them.

Grant says, “Any violation makes the business be out of compliance, but violations can be on different levels.” This means that not being in compliance does not necessarily mean that the business is unsafe.

Inspections are a “snapshot” in time and the violation are often corrected before the inspector leaves the facility. Dependent on the severity of the violation, the business will have any where between 10 to 45 days to correct it.

Any serious violations or notable quotes will be included in summary notes below, but the full report for each restaurant can be found at the WDA website, where they publish all of their current information.

ALBERTANO’S AUTHENTIC MEXICAN FOOD

Comments: “All foods in refrigerators and prep area need to be covered to prevent contamination of food products.”

Comments: “AS mentioned on line item #20 above, the red refrigerator was at 43 degrees F. Follow up inspection will verify it is holding at or below 41 degrees F.”

MIMA’S TEXAS STYLE BRISKET TACOS

Comments: “Three compartment sink used to wash, rinse and sanitize dishes. Bleach used as the sanitizer. Test strips available for monitoring concentration.”

Comments: “Ice cream cones stored uncovered adjacent to three compartment sink. Alternate location for cones should be provided. Cookie dough for toppings in cold hold unit, uncovered…”

Comments: “Sani bucket was mixed too strong and measured approximately 200ppm. Charleston remixed it and it measured at approximately 50ppm.”

Comments: “Tiramisu was being thawed at room temperature at time of inspection. This was discussed with the owner and the tiramisu was moved to the refrigeration unit.”

Comments: “Salads were being made and bare hand contact was made with ready to eat foods. It was discussed that utensils, gloves or some barrier between hands and ready to eat foods must be used. This was corrected and gloves were used for the salads.”

Comments: ” Opened commercial containers were date marked with opening date but discard date was incorrect as they were marked for 14 days…”

Comments: “Peperoni and shredded cheese was temped at 47F at time of inspection in the above counter unit. Shredded cheese and peperoni were disposed of at time of inspection and unit temperature was turned down.”

ST JOSEPH’S CHILDRENS HOME

Comments: “The facility has a slicer that was covered at the time of the inspection. The cover was removed and the slicer was observed to be dirty…”

Comments: “Observation: Employee was warming chicken fingers in a warmer. She stated that the chicken fingers were cooked yesterday, cooled and then the facility re-heats them for hot holding…”

MARIA’S MEXICAN GRILL AND CANTINA LLC

Comments: “Chemical dish machine was not dispensing chlorine at the time of inspection as supply bucket was empty. New supply bucket was attached, machine primed and tested the required 100 ppm.”

Comments: “There is a small product sink in the main kitchen that has limited cold water pressure and limited volume. This needs corrected within 30 days by September 2, 2022.”

ANTELOPE BUTTE MOUNTAIN RECREATION AREA

Comments: “Fly strips were hanging directly above food preparation area. This was discussed with the facility and corrected at time of inspection. The fly strips were removed.”

Comments: “Walk-in cooler was not holding foods below the 41 F requirement. Thermometers in walk-in coolers were indicating temperature at 51 F…”

Comments: “metal stem thermometer for checking food temps was not availiable. Discussed with Bryson, facility manager, states that thermometer will be obtained today…”
